Diet Beef & Vegetables Over Noodles Recipe


12 oz round steak
1 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
2 cup broccoli
1/2 lb mushroom
1 each onion
4 tbsp beef broth
3 tbsp reduced fat sour cream
12 oz egg noodles


Trim steak of all visable fat and cut diagonally across grain into 1/2 inch
thick strips.

Use both stems and flowers of broccoli. Slice onion thinly.
Slice mushrooms.

Cook egg noodles (the BROAD noodles are best).

Brown meat
in oil in large nonstick skillet, 2 to 3 minutes.

Add salt and pepper.
Remove meat.

Add broccoli, mushrooms and onion to skillet.

Add broth as
needed to prevent sticking, cook, stirring, 2 to 3 minutes.

Return beef,
heat through.

Remove from heat.

Stir in sour cream.

Serve over noodles.

Per serving: 522 calories, 34 g protein, 13 g fat, 67 g carbohydrate

Diet Banana – Apple Bread Recipe


1/2 cup reduced-calorie margarine
1 sugar substitute to equal
1 1 cup sugar plus 2 tb
2 eggs
1 3/4 cup all-purpose flour
2 3/4 tsp baking powder
1 cup peeled,coarsley chopped
1 apples
3 medium bananas,chopped
1 vegetable cooking spray


Cream margarine in a large bowl; gradually add sugar
substitute,beating at medium speed until light and fluffy.

Add eggs and beat until thick and lemon coloured.

Combine flour and bakingpowder; add to creamed mixture,mixing well.

Fold in apple and banana, Spoon batter into a loafpan coated with cooking spray.

Bake at350 for 65 to 70 minutes or until a wooden pick inserted in center
comes out clean.

Leave to Cool in pan 10 minutes; remove from pan,and cool
completely on a wire rack.
